And that producer was the largest in Turkey, while we were just starting out. \u015eamil Gence, then at Kavakl\u0131dere Wines, noticed the potential in us and spent four hours tasting with us. \u015eamil has a greater claim on today\u2019s WAYANA than he probably realizes. Kavakl\u0131dere\u2019s ability to maintain its position comes down to such key decisions.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">At WAYANA (or BEPPE, our original pizza restaurant\u2019s name), we have never hesitated to chase after wine producers. Yet, we remain puzzled by how weak their active marketing efforts are.<\/p>\r\n\r\n\r\n\r\n<h2>Akberg \u015earaplar\u0131&#8217;yla Nas\u0131l Tan\u0131\u015ft\u0131k?<\/h2>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph translation-block\">Organizing professional wine events in Turkey \u2014 the world\u2019s 17th largest economy \u2014 is almost impossible. At one of the few recent events, I saw Akberg Wines present for the first time. The title caught my attention: Noirs de Blanc. At first glance, it seemed like a spelling error; then I thought, \u201cIf this big mistake exists\u2026,\u201d only to realize it was deliberate. Attending and completing the tasting, I was glad to see Akberg delivering on their promise.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Sunumda, beyaz \u015faraba elveri\u015fli \u00fcz\u00fcmlerden k\u0131rm\u0131z\u0131 \u015farap yapmak niyetiyle giri\u015ftikleri bir yolculu\u011fun hik\u00e2yesini dinledik ve bu s\u00fcre\u00e7te ortaya \u00e7\u0131kan \u00fc\u00e7 \u015farab\u0131 tatma f\u0131rsat\u0131 bulduk. \u00c7\u0131karken kartlar\u0131n\u0131 al\u0131p kart\u0131m\u0131 b\u0131rakt\u0131m. Several producers have excitedly experimented with this concept at different times. One is Akberg, based in Izmir.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Beyaz \u015farap yapmaya elveri\u015fli \u00fcz\u00fcmlerin i\u015flenmesi esnas\u0131nda kabuk temas\u0131n\u0131n en k\u0131sa s\u00fcreyle s\u0131n\u0131rlanmas\u0131 tercih edilir. Kabu\u011fun fermantasyonda bir rol\u00fc yoktur (Orange Wine ve nat\u00fcrel \u015faraplar konumuzun d\u0131\u015f\u0131nda), dolay\u0131s\u0131yla beyaz \u015farab\u0131n renginin kendili\u011finden k\u0131rm\u0131z\u0131 olma ihtimali s\u0131f\u0131rd\u0131r.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">E\u011fer beyaz \u015farapl\u0131k \u00fcz\u00fcmden k\u0131rm\u0131z\u0131 \u015farap yapmak isterseniz, \u00f6n\u00fcn\u00fczde bir tek yol vard\u0131r: koyu renkli \u00fcz\u00fcm kabuklar\u0131n\u0131 kullanarak \u015faraba renk kazand\u0131rmak. Yani teknik dille ifade etmek gerekirse, beyaz \u015farapta neredeyse hi\u00e7 kullan\u0131lmayan maserasyon s\u00fcrecini farkl\u0131 \u00fcz\u00fcmlerin kabuklar\u0131n\u0131 kullanarak yapmak.<\/p>\r\n\r\n\r\n\r\n<h2>Siyah \u00dcz\u00fcmlerden Beyaz \u015earaba \u0130novatif Yakla\u015f\u0131mlar<\/h2>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Akberg, known especially for their B\u00fcy\u00fckba\u011f series featured on the WAYANA menu, chose three white and three red wine grape varieties and paired them as follows:<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Cabernet Sauvignon \u2013 Narince<\/li>\r\n\r\n\r\n\r\n<li>Bo\u011fazkere \u2013 Emir<\/li>\r\n\r\n\r\n\r\n<li>Merlot \u2013 Narince<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">We tasted all three pairs at the event mentioned above, but over time, the Merlot-Narince pairing didn\u2019t meet expectations and was not released. Cabernet Sauvignon kabuklar\u0131ndan \u015f\u0131raya ge\u00e7en bile\u015fenlerin (yani tanen, polifenol ve aromalar\u0131n) yeterli bir seviyeye ula\u015ft\u0131\u011f\u0131na kanaat getirilince, son presleme i\u015flemi yap\u0131larak elde edilen \u015farap, y\u0131lland\u0131r\u0131lmak \u00fczere me\u015fe f\u0131\u00e7\u0131lara al\u0131nm\u0131\u015f.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">The second pairing followed the same method with Bo\u011fazkere and Emir grapes: Bo\u011fazkere skins lightly crushed and solids removed; Emir grapes pressed, fermentation started; when expected components transferred sufficiently, final pressing and oak aging followed.<\/p>\r\n\r\n\r\n\r\n<h2>D\u00fcnyada yap\u0131lan benzer \u00e7al\u0131\u015fmalar neler?<\/h2>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">In 2007, Green Creek Winery in North Carolina, USA, made a red Chardonnay called \u201cChardonnay Rosso.\u201d As it\u2019s no longer on their website, it appears to have been a one-time experiment.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">In 2009, GLM Winery in the northwestern USA near the Canadian border produced a similar wine under the name \u201cEnrobed Wine,\u201d inspired by the French term \u201cLa Robe\u201d (the robe\/dress of a wine).<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">GLM Winery \u00fcretim yaparken koyu renkli \u00fcz\u00fcmlerin \u015f\u0131ras\u0131n\u0131 kabuklardan tamamen ay\u0131r\u0131p Blanc de Noirs yani k\u0131rm\u0131z\u0131 \u00fcz\u00fcmlerden beyaz \u015farap yapar gibi i\u015fliyor. Beyaz \u015farapl\u0131k \u00fcz\u00fcmleriyse normalden daha uzun s\u00fcre \u015f\u0131ran\u0131n i\u00e7inde b\u0131rak\u0131yorlar ki \u00fcz\u00fcm\u00fcn karakteristik bile\u015fenlerinin etkisi daha iyi ortaya \u00e7\u0131ks\u0131n. GLM Winery kendi \u00e7al\u0131\u015fmalar\u0131n\u0131 yapt\u0131ktan sonra Green Creek\u2019in \u00e7al\u0131\u015fmalar\u0131n\u0131 fark etmi\u015f. Ba\u011fazkere ve Cabernet Sauvignon yaln\u0131z renk olarak de\u011fil g\u00fc\u00e7l\u00fc tanenlerinin bir b\u00f6l\u00fcm\u00fcyle de \u015faraplarda varl\u0131klar\u0131n\u0131 hissettiriyorlar. Emir ve Narince beyaz \u015faraplar\u0131ndan almaya al\u0131\u015ft\u0131\u011f\u0131m\u0131z karakteristikler daha arka plana d\u00fc\u015f\u00fcyor. Yani \u015faraplar asl\u0131nda uzla\u015farak bir arada ya\u015famaya karar veren entelekt\u00fcel g\u00f6r\u00fcn\u00fcme sahipler. Hep s\u00f6yledi\u011fimiz gibi, bu \u015faraplar\u0131n memnun edece\u011fi pek \u00e7ok \u015farap sever dostumuz oldu\u011funu biliyoruz.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Final Word<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">\u015earap gibi \u00e7ok uzun ge\u00e7mi\u015fe sahip \u00fcr\u00fcnlerin en b\u00fcy\u00fck dezavantaj\u0131, inovatif a\u00e7\u0131dan kendilerine yakla\u015f\u0131lmas\u0131na sanki izin vermemesi. Sanki binlerce y\u0131ld\u0131r durmaks\u0131z\u0131n devam eden ezeli bir sistemin yenilik yapmak isteyenleri uzak tutmak isteyen bir koruma duvar\u0131 var gibi g\u00f6r\u00fcyoruz. Ama bu alg\u0131 hem yan\u0131lt\u0131c\u0131 hem tehlikeli. Ya\u015famay\u0131 s\u00fcrd\u00fcrmenin en temel \u015fart\u0131 de\u011fi\u015fimi kucaklamaktan ge\u00e7iyor.
